This powerhouse of a "weed" (did we really just use that word???) packs tons of coumarins, cartenoids and minerals (especially potassium) in it's fresh leaves. Can be eaten raw in salads, or sauteed in olive oil. If using dried, it is a fabulous tea that is a bitter digestive stimulant, with diuretic action and an affinity for the kidneys.
